Going back in June (on a Harley this time.....off round the desert)
The Cosmopolitan does an epic breakfast buffet.
Excellent views of the Bellagio fountains can be had from the slightly kitsche Eiffel Tower restaurant. Good food too.
Mix at Mandalay Bay also very good, movie scene views of the Strip.

I second that. We did their breakfast buffet $18 with unlimited drinks. ($25 if you wanted champagne) Lovely food. very much like the cheesecake factory. Good food at a reasonable price.Have the ribs if your in the Grand lux!!!!

Pretty sure It's owned by the cheesecake factory people, at least the waiter told us it was.We did the Mirage breakfast buffet (had a 2 for 1 ticket) and the Wynn Breakfast buffet, both very good.
Also did the autocollection at what was the imperial palace, they used to have a free ticket voucher on their website.
Le Reve show at Wynn was outstanding.
Shooting Machine guns is fun.
We did the scoot city tour to red rock canyon which was excellent.
Death Valley isn't far so you might want to consider driving there.
There was a new 'london eye' type thing being built, not sure if that's open yet.
Cheesecake factory in the Forum Shops was good. Their giant burrito and their stout infused meatloaf sandwich bring back good memories
If you like good (but expensive) craft beer, look at Todd English "The Pub".

Gambling-wise, I can't see us going beyond the slots tbh - boring I know but other than roulette, I don't really have an interest in gambling - don't mind watching other folk but I'm totally clueless! Maybe I'll win big on the fruit machine! ;-)

Yep - keep 'em coming. I'm off to Vegas on Easter Friday so have been copying down the hints and tips in a spreadsheet too.
My plan so far includes; Sky Dive, Shooting, Corvette hire (booked through Hertz - planning on red rock canyon, lake mead, hoover dam), Baseball (I'm a Mets fan and our B team play in Vegas), Food Challenge, Counts Kustoms, Pawn Shop and maybe a show. As per the OP - I'm not too keen a gambler (afraid I'd like it too much!) so will be content experiencing all the rest that Vegas has to offer.

Very interested in the corvette though - can I ask how much and what the deal includes?

Venetian is great. have stayed there about 6 times. If you get an offer or even ask if you can upgrade to the Palazzo. They do a thing, think its called privelege cost to us when we went was $100 per night. Includes buffet breakfast, gym membership, in room internet, all day coffee/snacks in the privelege lounge and a free bar in the privelege lounge every night for about 3/4 hours ( tip for the drinks etc). Amazing deal. Best $100 a day I spent.
All the cirques are good. Have seen Ra, "O", Mystere and forget the name of the one at the Wynn. Check out who`s on at the colleseum at Caesars but all the mainline shows are good. Recommend Jersey Boys if it is still on now at Paris I believe.
Great steak to be had at Smith and Wollensky`s on the strip between Planet Hollywood and MGM. So much to do so enjoy.

We saw CdS in MGM and Treasure Island - the Treasure Island one was far far better we thought.
