I've just got back (30 mins ago) from Dubrovnik, had a great time. It seems to fit tick the boxes you require.

Turkey if you like it hot.

Lara Beach or Belek near Antalya (only about 15 or 30 mins transfers). Lots of good all inclusive hotels in those areas, right on the beach.

For Kos we stayed at a place called Kipriatis Maris for all 3 trips, their mid market broad (couples mainly) offering (panarama adult premium, village and aqualand family) based over 2 resort areas but interlinked.

My advice would be to stay in this region (Psalidi) as you're close enough to get into town but far enough away to have a private beach and relax. Everybody has a pedal bike day to day to get around and there is a fully segregated cycle path from where we stayed into the town centre. The is a cheaper hotel (self catering) which is basic but very nice - Nikon Apartments - which has no private beach or proper restaurant, a smaller pool etc but very friendly staff with clean rooms and cheap drinks.

If staying in Psalidi don't be tempted to go away from town beyond the above hotels as there is a sewage works which can smell depending on wind (told by locals)

Things to do:

Therma beach at night - near Psalidi in opposite direction to town - thermally heated beach - locals go for parties/to chill at full moon - great fun.
Island tour - the one top rated on tripadvisor was the best (boat name starts with K, Katriana?) - we did a few and this was the best
Hire a quad/scooter/car and explore (get a bigger quad if you get one) - Zia (hill in the middle for sunset dinner went down well) - Bubble beach/Paradise beach - geothermal bubbles and nice sand
Restaurant called LaFlaka (spelling? But pronounced like that) - premium restaruant for locals that most people don't know about - great views looking over town
Mama Rosa - huge and tasty pizza's!

Out holidays average £500pp 5* all in via icelolly
