You can get the Cambodian visa on arrival. Just take a passport photo and crisp American dollars. They have to be perfect. Think it was $10.
First time I got my Vietnamese visa in Sihanoukville in Cambodia. Took about half an hour at the embassy.
The next time I used vietnam-visa.com. Pay a fee and you get an approval letter, then you use that to get your visa on arrival.

We did this when we went to Vietnam this year. SWMBO went to the embassy as she works nearby and said it was very well organised and took no time at all.R8VXF said:

We fly back from Siam Reap to HCMC then on to London, only in HCMC airport for the connection. Would that count as a re-entry into Vietnam?

I don't remember seeing international transit, but transferred from internal to international. Best bet would be to ask the embassy. If they are anything like the Vietnamese we met out there, then they will be more than willing to help. Fantastic people
We went last year and spent 6 weeks travelling North to South. Before leaving London I used http://www.vietnamvisacorp.com/ very easy and good service, they handled everything and it was all done online and the best thing was when we landed in Hanoi we were the last ones off the plane but the first ones called out in the Visa que.
Cambodia we entered by night bus, but it was a fairly simple 30 minute stop at the border, the bus handled the visa, so gave out all the paperwork before we stopped, we filled it out, gave it back and then when we stopped at the border they handed it over and we were all issued visa's.

I went to the "st" a few years ago and you just need to order a letter of approval online, there were quite a few online companies at the time, one would have hoped they may have improved the situation since then but it was not really any hassle.For Cambodia, you can probably pay on entry, depends on where and with whom, I got a bus from Saigon and the bus driver dealt with everything for us at the border ( about 15$ )

You can get a visa from the airport in Vietnam. Your hotel will issue you with a "visa on arrival" letter before you travel, usually for free. Take that with two photographs and $45US to immigration and they will issue you with the visa. Don't listen to the horror stories about huge queue's, it took me about 5 minutes when I was there in March.
If you google the airport it will tell you exactly where to go when you arrive.
Cambodia is similar but you don't need a letter, just passport, 2 photographs and money.
