Is there a best time to be ordering skiing holidays with companies like Crystal Ski? We are looking to go away in Feb (not the half term), but the prices seem a lot more expensive to previous years. This made me wonder if I usually book it a bit closer to the time we are going.

Also, does anyone have some good websites that offer deals?

A lot depends how fussy you are.

The best deals are the last minute ones. On the plus side you get to go where the best snow is from the offers available. You can't be sure of going to resort X / staying in hotel Y / having facilities Z though.

I've not seen a specific ski deals website so it's just a matter of either signing up for marketing emails/checking the operator's offers pages once a week.

Definitley look nearer the time, i have found over the last 10 years or so, that the best prices area round 2/3 weeks before, give or take a few days but thats for bargain deals, if you you need something specific then you you will need to book early, and pay more, or get lucky

I've noticed late deals are much thinner on the ground these days. In 09-11 there were some amazing deals with the recession and surplus accommodation. Supply started fell as chalet cos etc went bust but now demand is back up..
