there is a big ass waterfall in down town Spokane, not sure if its frozen in winter though. Washington is not the best state to drive across, but if you can take in Grand coulée dam and the lake above it to the south with dry falls at the other end. if your on a more southerly route palouse falls is not bad either, and the colombia gouge is probably more scenic than over the mountains on the I90, but its a bit of a long way around.

You could also take the souther route across, Twin falls has a nice water fall nearby and the snake river is in a pretty deep gouge. The roads north of Boise are a nice drive, through to lewiston and pullman. Look up old spiral hwy
How about Yellowstone to Seattle via Boise or Bend (Oregon) stopping off in one of those? Yet more spectacular scenery, although snow risk high at that altitude and time of year

see the note above about Shasta. Oregon are a bit funny about roads and safety, you cant pump your own gas, and they have big wide roads with huge shoulders and 55mph speed limits, strict chain rules. Even the interstate is quite slow compared to other states.
Why not leave Seattle south on the 5 and then branch off west (8 & 12 taking you near Aberdeen - nothing to see there except a Kurt Cobain memorial as he grew up there), and then pick up the 101 south to Astoria ?
Astoria is where they filmed the Goonies, as is cannon beach & haystack rock about 20miles south of Astoria - they also filmed bits of Point Break (indian beach) and twilight in the area. Granted, not a hell of a lot in Astoria, but the Oregon film museum has the Jeep from the Goonies outside, and is set in the old jail that is in the opening scene. Showing my age here I guess, but for me It was a must see for minimal effort.

From cannon beach you are already on the 101 to continue south. The logical thing would be to stop somewhere on the coast en route south to SF - thus keeping you on or near the 101 - or you could maybe head inland to Eugene/Medford or similar if you preferred.

Potential to switch cars in SF. Maybe rent some muscle or something interesting to head south to Los Angeles on the PCH? Mustangs and Camaros can be expensive for this depending on the season, but there are plenty of other interesting things available one way from SFO for small upgrade fees.

The San Luis Obispo area is pretty much half way between the two. Bonus: you can then go to Zorro's in shell beach for a killer breakfast, right by the sea.
