Thanks all, some really useful and helpful advice.
Will choose Top of the Rock over ESB.
Highline is earmarked.
Circle Line tour, open top hop on hop off bus, walking tours and Central Park bicycles all on the list.
we're staying in Murray Hill, sort of Midtown east side. Looks like a good option for access to various areas and not too mainstream touristy in it's own right.
Really looking forward to it.

We just came back and seen a few street games being played on the way to Yankee stadium. Lots of people's watching outside, if you are any good just ask them if you can join. One thing I can say is that the people were actually really friendly and didn't mind helping with information.

Also I was in a similar situation a few weeks back, wasn't sure what to do there, so we did both tourist usual and some exploring. Didn't do a bus tour, as you stop everywhere and your just in the bus and then waiting for the next one. My advice is use th subway, very cheap $30 for a week I think, safe and quick. Get off in a area and just walk about with a map from your hotel. It was great to do that with my kids too as we just didn't know what to expect. It was also during the day we did this so I thought it would be safer to do.

Top of the rock was amazing, you buy a ticket with a time slot and go back to catch the lift. Was about an hour wait around. Go at night if you can.

Tickets for the rock, statue ferry, ferry across from Brooklyn bridge etc were also cheaper at the actual venue I found. You will have a lot of people trying to sell you tickets before you enter the attractions.

New York is expensive, NYC souvenirs ar cheaper in China town. Mott st in China town has some amazing food. You can haggle there too. There's a very cool Italian restaurant called Patsys near 57th street, old school and Sinatra used to go there along with today's celebrity crew. Probably the mob too....

If your son is into the mafia etc, a bronx tale the show is starting in November and it's supposed to be great. On our last day the hotel got me a Lincoln to get back to he airport...was same price as a cab. The guy was awesome, we had time so he took us into some regular neighborhoods and it was great to see. Forest hills, and some other areas I can't think of the names. The guy lives there for 30 years and it was great to have an hour chatting to someone like that.

We're off in April for a joint 40th trip.

Can anyone recommend somewhere to stay that's more toward the travel lodge end of th scale but in a good spot?

We stayed in an Airbnb in Harlem, had a great time for 90€ p/n

The subway runs 24h and it's only 20 mins from Times Square (if that's your thing).

We rolled up regularly at 2am and asked the locals the way back to our place - They were very helpful and amusing in good measure.
