Has anyone got a nice idea for a vegetarian breakfast for someone allergic to eggs? I was thinking mushrooms on toast, is that a breakfast dish?!

Pancakes? You can use aquafaba (chick pea water) to replace egg in the mix.

I'm not vegetarian but often prefer the veggie breakfast option. Hash browns, mushrooms, avocado, tomato, maybe a bit of spinach, haloumi, beans. Some nice big mushrooms cooked with butter stuffed with cheese and whatever else you fancy?

Depends how much effort you want to put in (essentially, is it a lady you're trying to impress?) but chickpea flour can be used to make a reasonable vegan omelette or scrambled egg facsimile.

I do the veggie fried breakfast a lot and can confirm it's a good guy.

Ours is usually Halloumi, fried mushrooms, Linda McCartney sausages, fried tattie scones and veggie haggis.

You can also use mashed up banana instead of eggs in pancakes if the person is one of those mentals that likes banana.

Also, egg allergies? If my experience is anything to go by = psycho wine behaviour. A lot of wines contain egg based preservatives, in case you were looking for an explanation there.

First heard about this yesterday. And Vegan eggs!

Aquafaba sounds very interesting - I'm a meat eater and tempted to try it just because smile

Instead of breakfast, have you considered shooting her?

Maybe it's intolerant people that should be shot instead but unfortunately that would leave half of pistonheads dead
