I've always wanted to recreate C'etait un Rendevous in London. A proper west to east run, right through the centre using Tower bridge and a couple of tunnels.
4am on a sunday morning should be the best time.
Was it established that Rendezvous was done in a Mercedes and slightly sped up then overlaid with the Ferrari noise? Lend me the car and your licence for doctoring and I'll do it.

I agree with your idea though. There are too many speed cameras/random police dotted around.
I'd have thought the Clarkson-esque Land's End to Lowestoft would be a good way to spend a night.
I'd love to do a Gumball but I don't have £40,000 or whatever to cost is, nor the cash to pay fines etc etc.

I've often thought a Caterham would be the ideal toy....with a second set of bodywork halfway along the course and some sheets of vinyl wrap for a quick colour change in a car park..
Very doable and very very manouverable.
