The shape of what you're cooking also makes a difference: thin and spread out - shorter duration and higher temperature; thick and chunky - longer duration with a lower temperature.

Maybe recipes do take it into account, and I suspect oven thermostats are wildly inaccurate. Some people still choose to preheat higher to avoid the drop though. Cooking, and setting oven temperatures is more of an art, I think, than a science (I never cook, personally, being feral). I think accuracy of thermostats varies wildly, hence why recipes/instructions almost always say "adjust cooking time/temperature for your oven."

You cook with the oven door open . as 'heat from a warm oven is retained within its casing, rather than solely relying on air temperature' (although 'solely' suggests air temp is the key factor).
Your OH doesn't find 19 degrees as 'comfortable' as you do, either that or the time you set suits you, but not her (I find 19 cold too but dress for the arctic instead).
You target the 'quite mad' segment of the radiator buying public.

1. I understood perfectly, but unless one of us could be bothered to determine the actual heat loss, none of us will ever know whether the Higher Preheaters have the one true path or not.
