1) Both "winners" had a defensive guard.
2) Both have probably had some kind of training, particularly the garage scene as that's a typical defensive, non-aggressive stance that doesn't suggest aggression towards the other guy yet keeps your arms somewhere useful. Not to mention putting the guy in the recovery position afterwards. hehe
