Can I pay cash for my hotels in Norway

I honestly couldn't tell you. When I visit Norway I pay for everything on credit card. Down to a packet of chewing gum.
If the polls are right, and we Remain, then the Pound should strengthen - which would mean paying later is better.
(the Pound strengthening isn't an endorsement of Remain, the markets fear uncertainty - which is what Leave would bring)

I'm sure you can, but they'll look at you very strangely and will almost certainly require you to pay your entire stay on check-in, plus a certain amount extra on deposit to cover bar bills, incidentals etc. Plus of course you will have to walk around with a whole bundle of cash, which isn't necessarily a great idea.

I was in Norway last week and two shops refused cash as they didn't have change, I was travelling for two weeks so around 10 hotels, all paid by card, I could imagine the same problem of no cash for change.
I had a card in the shops so didn't argue but i was tempted to try I offered legal tender you refused so your problem but didn't time for the argument, which i would normally enjoy

It's pretty much a cashless society here and whilst Imagine it'll be out of the ordinary I can't imagine it will be a huge problem.
