The car seats are a very dark grey but the nearest polish that I can find is a light grey. After all who buys grey leather shoes nowadays? If I mixed a tad of black into the grey shoe polish would this work?

As a colour match possibly, but it I'll rub off onto clothes ... Better off buying a proper colour matched dye

Surely you would be better using the correct product on the seats.
There are plenty of products to use on leather car seats including some that can be mixed to the correct colour or shade.
Have a look on ebay & search for "Leather Interior Car Seat Restoration" or something similar. Loads of various products. (also available elsewhere)

can't see why not - Obviously a specific product is preferable but I used to do the bolster on my black leather seats in my merc with boot polish - provided it is suitably buffed it shouldn't mark your clothes. Down sides are it doesn't smell particularly nice and it can make the leather rather shiny and cheapo looking - I only really used it to fill any discoloured cracks in the bolster

I don't really want to spend ££ on cosmetics. Mechanics yes (it's a Saab Aero) but cosmetics I'm happy to do it quick n cheap really.
