WTF... chocolate burns my mouth?

Why do some chocolate products 'burn' my mouth? By burn, I don't mean 'set on fire', but there's some kind of chemical reaction going on which takes the skin off the roof of my mouth.
It doesn't happen with all chocolate; CDM, for example, is fine. And it doesn't seem necessarily to be 'cheap chocolate' which is the culprit either.
On the basis that I haven't heard of millions similarly afflicted, WTF's going on in my mouth?

Not really. I don't chocolate that often, and when I do it's usually CDM.At Christmas, we had some quite expensive 'chocolate money' - adult market, not kiddy stuff - and that did it. Just now I ate a little - again not cheap - adult Easter novelty choccy thing. Very small. And the reaction was similarly instant. Feels like it has left small blisters on the roof of my mouth.
