Can't help you with the Cayman-Evora switch but made the change from a 911 and found the Porsche better built and finished, more sensible mpg and probably held its value better with higher mileage. Evora wins on ride (big time) and handling (particularly in the wet) and massively more exclusive. After 2 years still feels an occasion to drive it.

I have done some longish (3 day) tests of the previous Cayman S before I bought my Evora and the new Cayman GTS last month as I am thinking of replacing the Evora.

All subjective but the Cayman is much better built than an early Evora although the later post 2012 Evora are much closer to Caymans in terms of interior quality etc. Porsche interior is a bit anodyne for my liking.

Evora (even the n/a) feels faster unless the Cayman is a PDK car, but the Evora is IMO in a different league when it comes to steering and handling feedback.

The Porsche engine is lovely a really great engine, the Evora Toyota engine is just a "very good" engine but the chassis is the Evora USP, plus the Evora looks like a mini supercar, if you like attention, you will get a lot more in the Evora than in a Cayman.

Evora running costs are lower although service intervals are more frequent, and they do eat rear tyres (think 6-8k miles), front tyres last forever.

For me, its Evora every time

I am pretty close to closing the deal on this:
