Your question cant be answered unless you specify the type of brick.

25 1x1 bricks will have far fewer permutations than 25 6x4 bricks - and thats only when you consider that all 25 bricks are the same type and colour.

Mixing brick types and/or colours further complicates things.

Yes, without saying what the different types of block are you can't say how many different shapes - not even for two.
