If that's your project, I think your offset issue might be the least of your problems.

Well, that project is certainly interesting! Looks like a high speed collision between an Escort and an MR2!

Still, most folk will tell you that the Mk2s on anything like stock suspension like small wheels: the 15s would be great (but you're severely limited in tyre choice for the rears) so 16s are probably the best bet.

If you keep fitting wider wheels at some point the inner tyre wall will hit the shocker or wheel well wall at this point you need less ofset to bring the wheel away from what it will touch pushing the outer wall further out
