Tricky when the disc keeps moving, maybe wedge the brake pedal. I think I would try an impact driver with an oversize torx bit.

Just drill it down to the depth of the hub flange with increasing diameter discs until the disc is free. Grind off anything thats left sticking out until flush with hub face. Fit new disc (no screw required), fit wheel. Job done.

That screw serves no purpose other than to keep the hub/disc wheel stud hole alignment when you (very rarely) take the wheel off. Makes refitting the wheel on those rare occasions a little more tricky but so what?
Or just leave the little stub sticking out so that you have a handy dowel when fitting new discs.

Stick a screwdriver in the disc "vents" then wedge it below caliper to stop it turning. Crude, but it works.

Due to the postion of the screw in relation to the diamater of the disc, the disc doesnt actually move very much when using this method, believe me I do this day in a day out.

Was a bit busy to have another go until this week
Tried several of the methods mentioned, no luck with any of them, had to grind it off
Was actually a lot easier to do without damaging the hub than i thought it would be

Will the remains come out of the hub though now you've decapitated it? biggrin

Hmmm. I agree the screw itself is superficial and although it is annoying lining the holes up without it I agree it doesn't do anything else. However, on that picture it does look like the screw is still proud of the hub face to me (maybe just the picture?) so I'd want to get it out of there before fitting a new disc.
