Why don't manufacturers put deep dish wheels on their cars these days?

I love deep dish wheels!

Only thing I don't like about some deep dish alloys are those bolt type things.

Do you mean the bolts that hold split rims together? They're kind of necessary for keeping the tyres on.

One of my favourites is the original Koenigsegg CC8S wheel. Distinctive and not overdone.

One of the most distinctive is the Sbarro Osmos floating hub:

I may be a little biased but I do love Minilites / Superlites / Revolutions.

Also really like the Compomotive's on the Stratos.

A bit more to it than that.
Deep dish means shorter axle/suspension arms = greater geometry angle change = potential handling issues.
Most cars that ran deep dish wheels were usually to increase the car's track over the std model using the std suspension component dimensions. But is you could lengthen the suspension components then you could fine tune the suspension better.
Plus, the 1980s arrived and the onslaught of FWD and fashion became flat wheels, as FWD doesn't lend itself to deep dish very well.
Or something like that.

(prepares to be shot down by those more in the know)

I love all of the above, especially the various BBS rims. I've always had a thing for 5 spokes and the ones on the Macca F1 GTR were particularly cool:

my immediate choice too, look good with/without the centre discs
Still reading the comments, but when I saw the headline, I immediately thought of the Style 20s... Glad there are others out there who agree with me on these.

I'd also add the ones on the E26 M1 and the Rothmans Porsche 962
=)
