No, it is not "beautifully crafted", if it were, the dubbed V12 would be in sync, and its rates of acceleration and deceleration would be logical. A car's engine note is its 'voice', its emoter, and, therefore, its sync needs to accurate.
However, this is a "beautifully crafted seminal piece of film-making", also done 'for real', which, lest we forget, was shot 6 years before C'Etait Un Rendezvous:

From the subtitles, it seems he was using the Merc because it had smooth suspension (see 5:10) in order to prevent camera shake - the camera wasn't gyro stabilised.
He re-did the course in his Ferrari (see 6:10) to get the sound.
And he admits it was in fact him driving (see 3:50).

Having been on the BP on Friday and seen the way anything with 2 wheels tackles it I'm surprised there aren't more deaths - they seem to have an unofficial bike 'lane' between the outer lane and the one next to it and if you stray into 'it' you are likely to either knock someone off or get your car booted.
