As long as you can park 'em somewhere then you're fine. I'm not convinced that you need a car to fill a certain role, but I buy into it as I'm space-constrained.
My Rover 623 is my daily snotter. It gets abused, doesn't get serviced or looked after, and realistically a £60 fill up is adding a third to its actual value.
My 370Z is my weekend car. It gets used every weekend or two for a few late night/early morning back road hoons, and occasionally takes me on a longer trip where I fancy a bit of power at the other end.
My VTEC Mini, once complete, will be a toy. I'll use it whenever I can be bothered to get it out of the garage and it'll do anything from a trip to the local Tesco to Spa and back.

Currently Four :-
Mk 5 Golf Gti 5 Door Dsg - My daily / dog hack
Mk 3 Toyota MR2 with 2ZZ engine fitted - Summer roof down fun car
Mitsubishi Evo 6 - Owned from new , currently has 24k on it - should sell it but can't bring myself to do it
Honda Nsx - 91 Manual - 13k miles from new , bought as a long term Investment - Classic car
2 in the garage nice and safe and 2 in front . I have a hard top for the MR2 so its fine over the winter months .
I would like to get it down to 2 cars , but just can't bring myself to sell anything .
Still room for several cars on the drive , including the wife's & daughter's car.

Most I ever owned at one time was 2, or 3 if we include the missus'.
-mkiv Supra 6 speed as pride and joy/ semi-daily
-Ibiza 2.0 GTI as occasional track slag/ semi-daily
-Arosa 1.4 for properly mundane stuff/ city driving
Was nowhere near as many vehicles as I'd be happy to own tbh. 2 of these were parked on the street at any given time (clue: neither was the Supra).
I'd have liked a clearer differentiation between pride-and-joy and daily beater. Arosa was perfect for what it was, but a spacious 4x4 like P38/ L322/ Landcruiser would have been excellent for winter/ load-lugging.
I'd hate to be one of those twunts perpetually selling something 'because the missus says I have too many cars', but I think 4 cars in a 2 person household is reasonable, so there.
We had 3 cars in Edinburgh, but now live in London and so have a maximum of 2 at any time given the inevitable premium on space. Were I to live in rural Aberdeenshire, I'd have god-knows how many lumps of metal strewn about.
I personally say 4-5 cars max for a 2-person household, 1-2 of which can be justified as 'ongoing projects'. I'd like to have a mk1 MX5 on-hand at all times for example, so every time the sun pops out I'd be good. An old LS would be a shoe-in incase a long distance waft was on the cards. That leaves a pride and joy (E46 M3 perhaps) and 2 'sensible-ish' cars.
If I end up with a petrolhead son/ daughter (fingers crossed) Ill be knackered. You guys in the 'who has the best garage on PH?' threads seem to be doing OK with several cars though...

I could probably own a model of every single half interesting car ever produced, and still end up wanting more....
Current fleet is a tuned 911 turbo (4x4, very easy to drive fast & has a bit of class) , a supercharged E46 M3 (hooligan car, total boy racer rear drive fun with silly colour wheels) & the daily hack, a beaten up 235k miles E39 530d
Each car has its purpose, and I'm pretty happy with my fleet, but want another Escort Cosworth, also want a Ferrari at some point when I can afford one, and I have a strange hankering for an Uno Turbo?
Given the funds & space I would have hundreds of cars!

Currently have 3 between me and the OH, which seems about right to me. The newest is 12 years old so if ones in the garage there is a spare!
Mercedes Vito - camper conversion for MTB trips and the OHs daily.
Volvo S60 - my daily, a dependable shed that offers worry free motoring, great in winter and for longer journeys.
Mazda MX5 - Mainly used for fun or commuting in summer.
I'm happy with my 3 they all offer something the others can't.
