I try to be courteous on the road and this sounds like a good solution but doesn't the truck driver leave himself open to being accused of undertaking?
'Undertaking' isn't an offence. Driving without due care and attention is, and his defence is more than adequate, even against a bell like Angus Nairn.

I saw him again and couldn't believe what I was witnessing, he was inches away from another cars bumper road raging again. The same guy. I didn't get involved but thought it may be an idea to call his company. I did, they weren't interested.

So, no, imo don't bother complaining. The majority of truck drivers are very good, they travel many long hours and have a job to do.
That's because you don't know how to complain. Don't waste your time with the company and complain directly to the Traffic commissioner. Not to be undertaken lightly, but I can guarantee you that they will act and I would not hesitate in a circumstance such as you have described here.
