As someone who drives something built with the antithesis of that idea it is actually possible to drive something with the combination of the 'right' engine and manual box within the speed limits when required and like any other manual car without 'shunting' it along the road.

Meanwhile the big supercharged V8 E class Merc with a manual box conversion seems like one of the best combinations to suit the OP's criteria.As well as probably only increasing in value when it's done.
