I like the Range Rover idea...
But what about something even simpler... a series 2 or 3 Land Rover...lots of engine and body options (Hard Top, Station Wagon, Truck Cab, Soft Top, Lightweight)
Mix and match...
Plus it has a chassis... It will be cheap to insure.. possibly no tax if old enough and if done correctly you should be able to make a little profit..
Simple to work on and a vast plethora of spare parts suppliers..

At this time of year anything convertible. Winter project and get it up for sale first warm weekend next summer.

Possibly repeat with a summer 4x4 project and bang it up for sale first snow next winter.
