You won't need a car in Edinburgh in fact it will be a pain.
Fly and get a tram from the airport to the centre.

If you do decide to drive I would not recommend the M8. Instead turn off the M74 at Abington and go up through Biggar. Best to avoid the Moffat - Penicuik-Edinburgh Road.
Carlisle a good place to refuel if required. Tesco, Asda and BP all just a few minutes off the M6.

As most of the others have said. Fly. No way would I be looking forward to a weekend with 10 hours of driving either side.

We used to drive Bournemouth to Leeds for a weekend - leaving Friday at 6pm getting back on Sunday at 10pm. Approx 4 hrs each way and used the A31, M27, A34, M40, A46 (Coventry ring road), M69, M1 route. Other than snarly stuff near Oxford mostly a quickish run. Approx. 280 miles door to door.

I'd then follow the A1M up to Darlington then take the A68 north for a bit of something different. G-Maps suggests 8.5hrs.
