I would say legacy again ( I have a 3.0 spec b) however and I may have missed this but, which petrol legacy does 35mpg ?
Mine does. A plain old 2.0 which has generously supplied 34-36mpg consistently for the last five years, on my DC commute.

But in the title you put 'interesting'. hehe

which in my opinion rules out your current non turbo subaru.

So, that leaves all of the aforementioned Octavia/ a4 options with the smaller NA engines as a fair comparison non??

haha! I don't think interesting always has to equal quick. To me there's something intrinsically more interesting about some cars than others.

A Volvo is interesting. A Subaru is interesting. An Alfa is interesting. A Vauxhall Insignia 4x4 is not interesting.

Never ever managed above 30 mpg in my 3.0R spec B, nor have we in the 2.5XT Forester

Saab 9-3 XT looks interesting to me, 4wd and plenty fast enough. http://www.pistonheads.com/classifieds/used-cars/s...

Subaru Outback http://www.pistonheads.com/classifieds/used-cars/s...

Okay it's not 4wd but it is still interesting. http://www.pistonheads.com/classifieds/used-cars/v...

I'm not sure it will get you 35mpg but a Volvo XC70 http://www.pistonheads.com/classifieds/used-cars/v...

That is interesting! Seems astonishing that they can wring an official 35 combined from that, when you consider it's also a (presumably) heavy estate, 4wd, north of 200hp.

I can't seem to find any true mpg figures but it weighs 1700kg which is more than the Subaru Outback and Ford Mondeo which both weigh around 1500kg.
