All the above are too modern, I much prefer:

Dolomite Sprint
Capri RS3100
BMW Batmobile
Camaro
Mk1 Escort Mexico/RS2000
Anything really from the 60's or 70's, proper RWD fun.

Only one? Doubt I could choose. I was born in '88 and remember the late-90s BTCC / Toca stuff fondly (if faintly) and they're still my faves today. It went progressively downhill thereafter IMO, but modern BTCC is still entertaining.

I always loved these, almost bought a 2.2 HDi but it was two different shades of blue and 2 dashboard warning lights too scary for me!



Always had a soft-spot for the pre-facelift ETCC Alfa 156 GTA too-



And does this count as a Touring car? Fits the mould, and very iconic!

The Rover SD1, Sierra Cosworth, E30 M3 era was the best for me, was never the same when the FWD stuff came in, always had a fondness for the Aussie stuff and Mount Panorama, that was great to see in the eighties.

Sierra RS500 from the 1980s is my absolute favoutite though.

The Shell Sierras from the Australian touring car series with Dick Johnson and John Bowe were my hero cars when I was a kid.

Liberal in this case meaning you could not buy the road car with the race car wings/splitters already fitted. It was effectively an after-market kit supplied in the boot with fitting instructions.
