Porsche 996/997 targa? Has great glass roof for good views and light. A front boot and rear glass hatchback. With the seats folded you can get 2 large rigid suitcases in the back and 3 squashy bags in the front. I have even had 2 fold up Bromptons and a weeks worth of luggage in the rear if you take the rear seats out (5 minute job).
In terms of performance 0-60 is 5 seconds and 177mph for the autobahns and Nurburgring if you fancy a few quick laps (with your luggage on board) which I have.
Range is very good, when touring 30-35 mpg is easily possible. The cars are very quiet and comfortable and even have cup holders! A real all rounder.
I have now sold the targa and it is missed but I will be touring Europe later this year in a McLaren 12C. I know lots of people who have toured in 12C's and 650's. They have a large boot up front and a shelf behind the seats. 0-60 in sub 3 seconds (not that it matters for touring) and 30+ mpg is easy at 70-80 mph. Also the ride is amazing and they do not drone like other supercars.

This is my choice - and was perfect when I drove down to Tuscany via the Alps last September.
Plenty of luggage space for bringing back a case or two of Brunello, quiet at cruising speed but one of the best sounding cars around when you give it some welly. And is great fun to throw around the Alpine passes too.

Lots of wonderful GT cars here. The Gran Tourismo is fantastic but my cousin gets 14mpg from his so you would need a 30 gallon tank to make the range.
He must be doing all his driving in town, I had the MC Shift version which has shorter gearing than the full auto and could easily get 24mpg on a run. I was a great car, I loved the MC box and was well impressed with how quiet, stable and comfortable it was at an indicated 170mph on the Autobahn. They are not cheap to run but running costs are not too bad for what is essentially a Ferrari, 12k mile/2 year service intervals help a lot.

Well, for me it really has to be a Ferrari V12. Modern enough to be fast and comfortable.
Classics are great (as you an guess from my ID) but it's a different type of driving, slower basically, and hotter.
So an elegant Maranello, a 550 or 575M would be ideal.
More controversially I believe it has to be Left Hand Drive.
The UK is not for grand touring, England at least is too small.
A GT car needs to be comfortable and hence quite wide. So LHD is a real advantage on the narrow roads of say, the Italian lakes. Overtaking is necessary too, one doesn't want to be stuck behind the freight on a route nationale depending on the significant other to shout "go !".
Finally I like the sheer decadence of having a car solely for the yearly tour.
Grand !

Maybe not the greatest, but still a very good shout would be a mk4 Supra.
I did a 3000 mile European roadtrip in mine last year, including 3 days at the ring, followed by a single 18 hour stint straight to Barcelona. 400hp, 30+mpg at regular motorway speeds, faultless reliability, comfortable, stable at speed etc. Even fairly practical with the rear seats folded flat
2 weeks luggage and lots of beer
Doubt you could find a better GT for the money.

A Ford Mustang GT fits all the criteria, plus is much more readily serviceable. And compared to many of the others suggested, leaves a lot more money left over for the gas bill itself.
They are surprising good in this role. Shouldn't be a surprise as it's called the GT after all and will do 350 miles between fill ups when touring which is more than enough for me. I'll find out later in the year how it works out on my road trip to Romania. The boot's big enough for a couple of dead hookers too j_s14a said:

very good candidate, although a soarer (very similar cars underneath) may offer even better value for money.

Come off it! That is not two weeks of beer. Take the cats out and the cabins fine. Wipers are adequate, blower depends on which model, my 97 seems ok at demisting.
Biggest thing against it would be fuel economy.
What about the Porsche Cayenne s diesel, 380bhp, 850 nm torque and 35mpg
I am not sure you understand the question, a diesel 4 door Porsche is not a GT car!Biggest thing against it would be fuel economy.
