A few of these signs on country lanes around Sussex - any idea what they mean?

They signify a wildflower verge, some of them have a hinged part so the yellow sign is only visible in the Spring/Summer (less so these days as someone from Highways has to attend twice a year to 'open' and 'close' the sign).

If you see them and you know, then you know.

If you don't know, then you shouldn't ever see them.

If you don't know, but you see them...I've read about this... something dangerous has happened on the space / time continuum in Sussex and you are now part of 'phase j', you been assigned the role of "a fun-toi"...

OP, be brave, tell nobody, sleep with one eye open and when they come... you better run like you've never run before.
