Bedford GT Circuit is 4 miles long and I average about 6 laps per stint. Probably did 4 stints before lunch and 4 in the afternoon

Sounds like it's going into a form of limp mode. What codes did the ECU throw up?

It is possible that the intercooler is heat soaking and or the turbo heat soaking the engine. I didn't realise that 225/230 Mk2 Meganes are already on the limit of the intercooler until after I had Paul @ RS Tuning map mine, luckily I got a Chinese cooler with decent welds rather than some of the joke ones, rolled that dice and got lucky. Paul has developed an intercooler and turbo oil cooler set to control those temps on the Mk3 Meganes:
