Vegetarian ideas?

I have friends to stay shortly who are veggies, they also avoid added fats/oils and salt.
They know it's 'unusual' and are happy to provide and cook for themselves, but I'd like to contribute if I can but have very little experience of vegetarian meals. My skills run to 'ordinary' steamed/boiled veg and taters to go with my meat.
I'd expect simply omitting oil and salt from most standard recipes would result in rather bland dishes so need some ideas please.

Ratatouille it extremely easy and tasty.
Blend some fresh tomatoes.
Chop up an onion, some red peppers, yellow peppers and courgette.
Fry the onions for a few min then add the rest of the veg and tomatoes, add some tomato puree ( if that's allowed ). Cover the pan and leave on a low heat for 30min stirring occaisionally
Serve with cous cous.
Why people go on these monastic diets is beyond me, seems to be a bit of a fad.

Just found out, to be even more awkward; no dairy allowed either.

I'm keen to talk to them about it as they're good friends and seem to be quite keen. It's all to do with one of those American health johnnies; Dr Fuhrman. It's got a catchy name too, so what's not to like? Is there any reason behind these requirements, or is it purely for health reasons?

I think I'd be trying make a big fk off seedy, salady, beany, lentilly raw veg type platter thing provided they can have nuts of course, loads of chilli flakes, lemon, harrisa, big herbs like coriander/basil/mint etc.
Can they have eggs? loads of salads with eggs and a yolk can make a great dressing, alternatively a twist on carbonara, loads of restaurants doing spins on carbonara with cauliflower/broccoli etc.
