Slow cooker cock-up

Mid afternoon, I prepped a load of beef shin and veg. Popped it into my slow cooker... but turned the switch too far and put it on 'warm', rather than 'high'.

Didn't discover this for 2.5 hours... so that was my dinner plans ruined.

I've since stuck it on to cook, it'll be pretty much done by 10pm tonight.

Thing is, what do I now do with it? - We're going to have it for dinner tomorrow, but it'll take ages to cool and I"m not sure it's a good idea to put a big pot of hot food like that in the fridge anyway!

What's the consensus on leaving it overnight, then sticking it on low tomorrow around lunchtime, so it'll have had about 10 hours cooking by dinner?

Sounds like a plan, the beef will be really tender by then. Or perhaps a thick soup. But still tasty. biggrin

I'm just concerned about bacterial growth - which is why I didn't just switch it off earlier and leave it for tomorrow - wanted to ensure the beef was cooked through first.

My O/H is a former EHO who used to inspect restaurants, abbatoirs and food factories. She persuaded me to buy a slow cooker several years ago and we use it at least once a week during the colder months. She will happily leave cooked food in it on the worktop for up to three days i.e. if we cook a stew on Monday, it stays in it until Wednesday evening. We haven't suffered in any way at all and she has what I'd call a 'delicate constitution'.

She also uses the microwave and the oven (cold of course) to store cooked food.

Heh, I put it back on at 3pm, dumplings are going in at 6pm. Will let you know... around 10pm? - that should give some incubation time smile

Well, that was very tasty. I think it matured overnight!

And there are a couple of servings left for during the week, too.

Agreed, leave it out at room temperature for another few days to let the flavours fully develop

Add cheese too.......
