Agreed; I don't proofread quite as rigorously as I should (and you only get to see so much of your post in preview anyway), and I often have to go back and edit. Call me old fashioned, but I like my posts to be legible and as grammatically correct as possible. Quite often I will have a couple of bites of the cherry. A five/ten minute window of banner free edits would be good.

It does amuse me though when people edit multiple times and don't think to delete the last edit, so you see multiple edits.

Not so. A moderator can also edit a post.

Mods can edit posts too, so the 'edited by' is actually useful.
