We have a car worth £21k and would like to shop for a replacement with a budget of around £10k.

Haven't decided what the replacement will be yet, so it's too early to speak to dealers... But chances are we will buy an approved-used car from a main dealer (not sure which manufacturer yet!)

What are the chances of them accepting a £21k trade-in in exchange for a £10k car?

No issue at all.
I've done it before.

They will say thanks and let you drive off and keep 11k as well!

I've also done it before (albeit trading in two cars that were collectively worth more than the one I was buying). I still had to pay £1000 to "secure" the car for me, the amount of which was added to the refund value to me and sent via cheque once the transaction had been completed. Must admit that whoever wrote that cheque had the most elegant calligraphy I've ever seen.

We do it at our car sales company. Pretty common and no massive issue.

It'll be OK but be in no doubt the dealer will be the winner and likely booking their next Maldives holiday before the door has closed behind you.

^^ as said. Just bear in mind they may not value it at the same amount that you do, so that £21k may become £18k, which may mean getting a deal done is impossible.

For what, a straight swap? Or do you expect them to pay you the difference on the extra your trade in is worth?

You'll be paying retail for one and getting trade for yours - that could be quite a gap but other than that no problem.
