I was out on the bike earlier this week and stumbled across the A543 in N.Wales it takes you over the Denbigh Moors and links up with the A5.
The weather was a bit moody but it made the scenery look more dramatic. I think I only saw about 3 other cars on the entire road. I know I'll be heading back there soon for another go.

Not exactly a new discovery, but having previously used it as the first 'fun' road heading out of London for a hoon I now live at the opposite end of the B158 and commute back in everyday.
Even with the traffic and the occasional quarry truck I can still pretty much guarantee a few bits of 'proper driving' every trip to an from work. Suddenly owning a fun daily driver would make sense again.

Nobody has mentioned that little stretch of road between Macclesfield & Buxton, aka The Cat & Fiddle, so I won't either.
Best kept a secret.
Pity about the 50 mph average speed cameras though.
Most entertaining roads I have experienced in my life?
Without a doubt, the Andermatt Loop, and a couple of extra alpine passes thrown in for good measure: Susten, Furka, Nufenen, St. Gotthard, Petit St. Gotthard ( cobbled! ), & Grimsel.
All tackled in the company of a large group of TVR S owners in ( mostly ) glorious early July weather this year. Topless of course!
Edit: The Nufenen was so good, some of us did it three times
Best kept a secret.
Pity about the 50 mph average speed cameras though.

Another one from my holiday to France the other week is the D102 between Jabron and Castellane, which is a very narrow and twisty road through a gorge.

Well I was meant to do the D2202, but somehow ended up on the D28 just east of it which is another stunning gorge to drive down.If canyons are your thing you need to go here about 40km west of Castellane.
