'ring and N Europe trip ideas

Hi all,
I'm planning my next road trip and have this loop in mind:

I'll be travelling with my wife and we have about 10 days for this trip.
The first stop will be 2 nights at the 'ring, then planning to head towards Amsterdam and the coast before looping back towards the tunnel.
Any advice and recommendations?

Shoes / Handbags / Shopping whatever she likes.
Otherwise you'll be doing the next trip on your own.
You aren't going very far, so hopefully she won't get bored senseless
with overlong motorway trips.
Like a lot of the Ruhrgebiet, there's not much of touristic interest
in Essen. Bomber Harris saw to that. Having said that, Dusseldorf has a
pretty good square km of pubs in the Altstadt.
Thanks for the heads up - but I'm too worried about the wife, she's done about 20,000km of touring on the back of bikes over the years... and loves driving our current S2000
I'm more interested in whether there are any interesting roads to drive between the 'ring and Amsterdam and any good / fun places to stop.

- Definition of good place: vibrant town, sandy beach, historic, cultural, etc...

As background, we recently (last month) drove to the Italian coast via the Alpes, last year did the Milau bridge & South of France and 2 years ago did a 'Stelvio passes' trip.
I'm keen to hear suggestions around this (potentially uninteresting?) Northern part of Europe, focusing on going to the 'ring and back

Calais > Lille > Ardennes (Bouillon etc) > Spa > Ring.
Then head south to Mulhouse via Black Forest (B500 etc) and back to Calais over Vosges and through Champagne region.
Plenty to keep you entertained behind the wheel and good places to visit along the route for Mrs J

Lux City I find quite nice. I'm keen to hear suggestions around this (potentially uninteresting?) Northern part of Europe, focusing on going to the 'ring and back
One or two of the towns in East Lux, along the Mosel, are also quite nice. Remich springs to mind,
although some others are smaller and quieter.
I also seem to remember that I've been to Aachen, Monschau, Koblenz and Bitburg in Germany,
Valkenburg and Maastricht in NL and enjoyed them all.
Just a few ideas. Different folks like different things.
A final decision has been made and we're going to the 'ring for 2 nights and then stopping in Brussels for 2 nights on the way home... Following some of the advice on here and experience from previous trips, it'll be nice to have 1 full day out of the car.
