I grew up on Anglesey. Up until recently I visited regularly.
It's not worth the bother of visiting if you are after roads...and bear in mind that the North Wales police are some of the most vigilant when it comes to speed enforcement in the country. Every last ticket I have had I got in North Wales.
Anglesey is fairly flat so there are no interesting passes or roads full of switchbacks. It has a fast dual carriageway you can't go fast on without getting a ticket.
Now what makes Anglesey worth visiting is:
Trac Mon (for the petrolheads) "Anglesey Race Circuit".
It's south coast (and its coast generally). From the south coast the views over to the mainland are stunning.
South Stack lighthouse, bird sanctuary and coast.
Beaumaris and its castle. Eat at Ye Olde Bulls Head Inn if you can. The food is stunning.
There are also many ancient monuments and visitor attractions along with some sandy beaches and so on.
If you like mountain passes, twisty technical roads with quick sections then you need the "Evo Triangle", Horseshoe Pass, Denbigh Moors and so on.

Just do the A5 up to Capel Curig and back a few times, some great little sections on that (assuming you don't get stuck behind dawdlers/are capable of overtaking).
The A5 through the mountains is a beautiful road. But if you speed on the (very few) long straights you will get a ticket. Having said this the rest of it is great. Roof off in the summer it's quite a joy. Here use this. I made this route up a while back. I live in the area so I know most the roads. The roads on here are most of the best roads in the area but there are plenty more. There's the A4080 which runs west of Anglesey and the A5025 which runs east. There's also the A543 heading towards Denbigh and the A548/A544 heading towards Abergele. You also have the A470 running towards Dolgellau, then keep on going and turn for Machynlleth. You have a pretty road there. Then you can drive around the lake a.k.a the B4405 and A493 heading towards Aberdovey. Hope this info helps.
