Do you have any recomendations for this ? Enjoyable roads/routes is South England and why?

I start with the A413 Aylesbury to Northampton.

Has the bonus of going past Silverstone. I used to use it a lot to go to the races. Now more traffic calmed. Some flowing sections, but interupted by some 30 limits for villages etc.

South England covers a very large slice of territory. Where to begin? The possibilities are legion.
I'm a confirmed fan of B roads and certain unclassifieds. They tend to have less traffic and pose more of a challenge to drive well.

A couple that I particularly like.
B184 Saffron Walden to Chipping Ongar.
B660 Ramsay St Mary's to Bedford.

Plenty more in my 'little black book'. smile

A272 from Winchester all the way over to Petworth.
Or leave A272 at Midhurst for A286 down towards Goodwood/Lavant, then B2141 up to Petersfield.
