Euro Trip advice

I'm going to Trier for the German round of the WRC in August (with wife and son) and staying about 15min south of Nurburgring in Sunparks. About 45mins from Trier. Apart from the 'ring (which I'll do one evening) are there other good roads within an hour or two. We are there for 8 days costing just over 800 E. Going via Norfolk Line and using TomTom Europe (any good?)
