I'm sure someone more qualified can answer but I've read threads with numbers ranging from £35/40k all the way up to £90/100k.
It obviously depends on the level of components you go for as there's a huge difference in, for example, suspension bits as well as engines.
Some of the little things might only a be a few quid here and there but as with anything to do with cars, it can soon add up to an eye-watering amount.

Seriously though there are a couple of modifiers to a GT40 Kit car, 1 how authentic and 2 if you want 'new' registration. Both add thousands to the build costs. I guestimated that a 'new' reg rather than a Q costs 10k.
As for how "authentic" adds costs:
A set of generic catches for the clips are about £40, a set of OE type Hartwell latches are £350-400.
A set of 'aero' fuel caps are ~£70ea or ~£200ea for the OE.
A Mountney Wheel is ~£60, A Moto-lita is £270.
Generic Alloys are ~£500, BRM or Halibrand style are 2k
Etc Etc
Other issue with the GT40 is that it's a replica not a MR2 pretending to be a Ferrari so you need all the tiny little bits and pieces. All the little clips, the wiring, sound deadening, odd bolts. etc etc etc.
Ignoring spec, there is also a major trade-off between time and money, you need to spend one or the other. Prime example being the panelling, much easier to buy the preformed panels but cheaper to cut and fold yourself.
Cheapest way is to get a part build where someone has already bought the parts. I've seen one example where someone has managed it on a 10k budget!
Full kits are roughly 35-45k for 'everything' at the basic spec level (Tornado do a 'super' kit that they claim includes every single thing you need including the brake fluid for £38,250-00 + VAT)
Basic Chassis + bodywork kits are about 8-9k+
Myself I've not set an overall budget but rather a monthly one and I'm purposely not adding up everything although at a guess I'm well north of 15k already. I estimate I could do it for about 25k (ie 10k more, 2K wheels, 1k glass, 1k exhaust, 1k suspension, 0.5k tyres, 1k brakes + a myriad of bits and pieces) but more likely 35-40k.

One large caveat though - these cars are ONLY as good as the person who built it.
I've seen £100k cars (with lots of nice parts, injection, ZF box etc) but the build quality has been shocking whereas i've seen really well sorted £40k cars where someone has taken a lot of time & trouble to ensure the car is well assembled and they've spent their budget wisely.
Well I decided I needed to raise my compression from 9.2:1, as was worried I would loose my low end torque, so old pistons out...
And new pistons in, this should get me up to 11:1, much better!
And heads on, not torqued yet though as need to get some sealant for the water jacket bolts bolts.

Well progress has been slow of late but I have got a bit done:
Fitted some fibreglass panels each side of the dash to seal the fuel pipes from the cabin (IVA requirement) absolute sod to get them them fitted and involved lots of swearing but got there in the end. Into these I have mounted access panels and the fuse board.
Spent ages on these parts and then realised they will never be seen when the dash is in but I know they look nice...
Also got the steering column fitted including FIA quick release boss (just like a real racing car) which in turn has allowed me to start to position the peddle box, I think it is about right now, trying to get it as far to the right as possible to straighten up the driving position.
