I used to sell Alfas and the 2 litre Twin Spark for me is the pick of the range. I prefer the looks of the pre facelift cars inside and out and the build quality seemed to get worse with every facelift. Never a fan of the side skirts on the Veloces which always seem to peel away and it hides the curvaceous sills, (oddly?) one of my favourite details.

Beautiful cars the 156s, my favourite modern-ish Alfa. I'm on my second 2.5 V6 (unfortunately the second one goes to a new home on Wednesday), and I have loved them both. The pre-facelift is a prettier car both externally and internally.

Have you tried unplugging your maf, (mass air flow) it should be a connector on the r/ h side of the engine bay, half way between the air filter and the throttle body, it's a free check, unplug and see if it makes a difference.
One of my GTV's used to flash up eml and perform rubbish, I sorted it by wiggling all the wires behind the centre console until the eml went out, it was a dry joint in the loom for the throttle pot

Where abouts under the centre console are we Talking?

I've plugged my car in and fault code "P0100 - Air Flow Meter"... Unfortunately it's a fairly new MAF installed in December.

Diagnostics are showing the MAF is reading air flow, but not showing a Voltage output... Currently unsure if that's due to the MAF being broken or whether it could be a wiring problem between the MAF and ECU...

Let the fun and games begin!

I wouldnt rule out a faulty MAF. They are prone to them and some of the spurious ones dont last long

not the same engine, but my Alfa 166 v^ had similar issues a while back (rough idle & loss of power)

Try replacing the MAF first, then the Lambda sensor, before you start on the throttle body

On my GTV is was left side behind centre console, do the maf unplug first.
