Honestly - just get it working properly before thinking of new ways to make it not work properly.
It's your car and all that but I'd strongly recommend focusing your energy on resolving the existing issues correctly so that you are at least in the position to make educated choices about the car thereafter.
It doesn't need 4 valve heads nor VVT. With vanishingly few exceptions, everyone who reinvents the same old radical ideas which have never worked before just ends up with a ruined car and/or a pile of bits. If you don't have time to set up the throttles you don't have time to rebuild the engine let alone convert it to 4 valve heads. And you still have no idea what a working Cerbera is actually like so I'm struggling to understand the desire to mess with it rather than just fix it.
If it needs a rebuild, then for the car's sake give it to APM, Powers or Str8six to rebuild and set up properly.

I would add jools to the list of places to take the car for setting up. Maybe at the same time have a leak down test.
Without more data on the health of the engine; tuning ideas are lost.
First rule of tuning is make sure the engine is healthy enough to take the extra stress.
But that's my opinion.

I have no experience of the AJP unit which is the reason for many of my questions.
I would say the car is quicker just from taking the bad throttle pot out of the equation. I had a couple of brilliant blasts on the weekend and the engine was better, but it still drinks oil badly.
So a rebuild is definitely needed one way or the other unless i just live with the oil problem.
I am just starting to enjoy the car but there are plenty of things that could be improved in my opinion of course engine related.
I am insanely busy until feb march on an absolutely brilliant project but when the weather turns for the worse I will strip her and see whats what. It's on the original crank so that is on the list to be swapped regardless.
This is a fun car for me and so i'm open to anything. I'm just putting some ideas out there!

Took me a while to accept that AJP8s were not suitable candidates for hydraulic tappets, even though some suppliers, such as Crane, now rate their 'lifters' to 7,400 rpm. I hate the labour intensive maintenance needed to keep these engines working properly, but I've come to accept that the AJP8 is such a beautifully insane engine that most faults are forgiven.
