Throttle pot readings

It could be that the screws holding the pot are slightly loose, and the vibration of the engine is causing the pot to move.
I think the leads are just long enough that you could temporarily connect the pots the wrong way round (i.e odd bank to even and vice versa). Obviously the engine wouldn't run quite right like this, but you could see if the problem moves to the other bank - if it does, then it is likely that the fault is with the pot (or its screws), if it doesn't, then it is an electrical or electronic fault somewhere further down the line.

It was exactly what you said. Half a turn on the screws and the throttle pot reading is perfectly stable again.
