Running Temperture: When to worry

Nothing has gone wrong, but I am interested to hear what people's opinions are on this.
On my Cerbera, on a hot summer day the car reads about 90 degrees when moving along at 70ish mph. If idling in traffic I note that the first fan comes on at an indicated 95. The second fan comes on close to an indicated 100.
I have seen the gauge pop up to about 101/102 a couple of times, but it then seems to drop back down to 95 and yoyo slowly between the two - until we all start moving again.
At this point it returns to 90 degrees.
So the question is - at what point should I worry and pull over, since I have no idea how the indicated temperature relates to the real temperature, or what a "problem" temperature is.
I am sure many London dwellers who battle the traffic often see their Cerbs cooling pushed to the limit in the hot sun, so what do y'all think?

General rule of thumb is pull over & worry if it gets to temps that it never has done before. The guages aren't the most accurate, but they are consistant, so if you suddently notice it's getting to 105-110, then it's time to worry. All the time it's approx the same, be happy that it's running sweetly !

Looked into this a lot as I too was worried about mine (which was behaving the same as yours). The general advice was if the fans are coming on and you can't see any steam then you are ok.
Worth checking the coolant level and that both fans come on though.
Anyone tried water wetter to see if that helps?

I dont agree with the steam advice!!!
Cerbera hoses start to perish after 4 yrs and you can lose coolant without seeing steam, a lack of coolant (even an inch or two under the coolant level line)will cause temps to rise sky high especially in traffic. If you go over 105 then pull over. Let it cool down and then check the coolant level.
You really dont want to get heat spots or warping.
