Fairly simple reason - a few layers of carbon are going to be lighter than glass. but why don’t the race cars have rear windows, surely they would be useful???The 1995 GTRs still had the glass cockpit windows but by mid-season most of them were covered by a thermal blanket to help keep heat out of the cockpit. This would have rendered them useless, but GTRs didn't have inside rear view mirrors to begin with. I think the rear wing pretty much wipes out most of the view you would have.
The GTR in these photos is a 1996-spec and removing that glass would have been one of the many updates McLaren developed to bring the car closer to a true racer. Many of the later GTRs also had the glass removed from the rear engine cover, again in an effort to save weight.
