oil temp very high, water temp normal. Any ideas?

I know this is an old post but I also have an Aston DBS V8 1971 automatic and I just had the same problem. I changed the oil BUT NOT THE FILTER. As the car warms up, the oil temp trails the water temp by 25 deg. The water temp stabilizes at 85 deg. The oil temp keeps increasing and once it is about 15 less than the water temp, both head for the stars and the car overheats. I am thinking that I need to change the oil filter. Shouldn't be the thermostat or a blown head gasket........I don't think it is running lean.

Firstly, you should NEVER change just the oil.
If the oil is dirty enough to need changing the filter is what catches the dirt entrained in the oil, so it too needs changing.
Secondly, you need to check for the usual causes of overheating.
Head gasket failure
Coolant system failure
Water pump
Air-lock in system
