oil temperature reading zero (even after replacing sensor)

Sensor driven by the Dash ECU only - no fuses I know of?
You'll need a multimeter to see what voltage is at the end of the connector - there should be 9 v or so - or at least some reading on 0-10 volts DC
You may have to trace the wiring back to the bulkhead connector?
Check the Dash ECU and the plugs (give them a waggle) that go into it - to the right of the pedal box, usually behind an panel which you need to unscrew, to the right under the dash in front of the door?

I notice mine does that if the car's been wetted a lot from above or below (usually having been pressure washed, gently of course!) or has been somewhere very damp.
Dodgy connection somewhere in the loom between the bulkhead and cabin is my guess but I'm not up for having the dash pulled apart having checked up to the 'plug' at the bulkhead.
