A light skim does wonders. If however you're going to tack the car you may wish to consider the following :
Drilled discs have a habit of cracking when used hard, the crack radiates from the drillings in the disc. The drilling on good quality discs is chamfered to reduce the likelihood of cracking.
This chamfer will be reduced by skimming and the disc will now be more susceptible to cracking. How much more is difficult to predict.

I thought the Sag had separate disc and bell, that looks like one piece. My Tuscan had sep disk and bell.
