Firstly, I had an error display, saying that my water temperature sensor has failed. Can I get this sensor locally? Also, where will I find it on the engine?

Secondly, I have lost the rotary function of the heater, and blower knobs. They operate in thier push function (I can hear the air con kick in)! Is it difficult to get the individual panel off?

Never seen it myself, but have a look at this thread for temperature sensor error issues:

There are two sensors, both in the block under the airbox. The ECU sensor is the one under the second throttle body (from the bulkhead), the dash sensor under the fifth. TVR cars parts are in Hampshire so must be pretty close to you from your profile.

As for taking the panel off, it is pretty easy, just two hex drive bolts to remove from underneath IIRC. But, it is pretty simple in there with a ribbon cable from each rotary switch. So, if the push functions and LED's are working, probably not the switches themselves. Worth getting your head in the footwell and checking connections first.

They all do that sir, does it stop showing fault after a while and does the water temp read ok, if it does then it is as said they all do that

The problem with the blower knob sounds like the grub screw has come loose so the knob is just turning round and not turning the control post that it sits on, if you look at the picture you put up you will see a small hole, first of all see if the knob pulls off and if the grub screw is still there if the it is then you just need to tighten it up, if not you need a grub screw, by your description all is well as when you push the knob things are working so I reckon its grub screw loose or missing, good luck

So when you turn either knob clockwise, more LED's illuminate? If so, suggest checking the heater fuse - No 28 I believe.

If you go into Service Mode IIRC What does "Flap Position " indicate when you turn the knob ? ... The motorised control of the "Flap" in the passenger footwell is indicated.
Flap Zero is the closed position , but you should able to monitor it's opening and closing on the A/C panel IIRC

Sensor is über the air box as described in a post above. The heater rotary controller is removed from behind the pod. This is held in place by two bolts, one under each corner of the pod.

If you are lucky, the ribbon cable will be loose and just need re-connecting into the back of the controller.

Ok, long delay, again!

How do I get the outer part of the bonnet off? I've released the 2 latches at the screen end. I now see that there seem to be 2 types of retainers at the front end. I plate either side,which I guess are failsafes? And, a ball and tube sort of affair?

Slide the sleeve which released the ball. Then lift bonnet at the back and withdraw towards roof. I put a blanket on the roof and lay the bonnet on it. It's a 2 man job.
