Why not just put jam on one half, and cream on the other? Then on assembly you can have it whatever way you want just by turning the scone upside down. Everyone's happy!

You should as it the correct way to do it. In any dessert type situation the cream should be on the top.

Trifle - cream on top
Strawberries - cream on top

Re-assembling is ok if you have a big mouth George but for the more delicately inclined a scone should be eaten as two separate halves. Besides which, that way you get double the pleasure! lick

It's a question of viscosity as well... How do you propose to get thick clotted cream to spread well over runny strawberry jam? One answer is to marry your sister as you're Cornish, all other civilised places do it the correct way. Cream, then jam.
