You could try asking them how they come to that conclusion given the 2010 Motor Vehicle Block Exemption.

Manufacturers' warranties should not be conditional on the end user having repair and maintenance work that is not covered by warranty carried out only within the authorised repair networks, or using spare parts of the manufacturer's brand or a brand imposed by him. Manufacturers can, however, legitimately refuse to honour a warranty claim if it results from incorrect repair or maintenance work carried out by an independent repairer or the use of poor quality spare parts.

So clearly your exhaust needs "repairing" and the components to be used, whilst not OEM Aston parts, are not of a "poor quality". Broadly as long as parts are of a matching quality, you should be good to go, but may need to fight your corner.

There is some uncertainty around "extended" warranties bought years later from first sale.

No. The V12 has two sets of cats. So it's possible to lose one set without failing MOTs, triggering Emissions lights etc etc.

The V8 has only one set of cats. Your best bet is to replace them with some 200 cell cats.

The 2006-2010 V8 Vantages have a catalyst section where the primary and secondary are manufactured in one integral unit. There's still two there, but you're correct that there's only 1 'set'. Big old suckers too:

The 2011-on V8's had the primary and secondary separated out. So the Primary is now in the manifold, just like on the V12. Presumably this was done to get the primary cat closer to the cylinder head and pre-heat faster for emissions purposes.

So on the later cars, you can still swap out the secondary cat section for sport cats or even decat pipes. If you want to swap out the primaries as well, the only real way to do it is to go whole hog and do manifolds/sport cats; reverting to the early MY layout of cat-less manifolds with emissions monitoring back in the cat section.
